Banana fritters

Ingredients :

200 g white flour

1 packet of baking powder/ levure chimique

4 ripe bananas

50 g of brown sugar

3-4 tablespoon of raisins

1 tablespoon fennel seeds ( gros anis)

1 tablespoon of vanilla essence

Procedures :

1.Peel 4 ripe bananas and mash them in a bowl.

2. In another bowl, sift 200g of white flour.

3. Add 1 packet of baking powder with the white flour and mix.

4. In a large bowl, add the mashed bananas. Incorporate flour to the bananas little by little and stir. It should be runny batter.

5. Add 50 g brown sugar to the mixture. Stir.

6. Add 3-4 tablespoon of white raisins. Stir.

7. Add 1 tablespoon of vanilla essence to the batter. Stir.

8. Heat oil in a pan for deep fry.

9. Fill a tablespoon with batter and drop the batter in the hot oil in pan.

10. Fry on both sides for a few minutes till brown. Use medium heat.

11. Remove the banana fritters from pan and place on paper to absorb remaining oil.

Serve with tea, coffee or milk!
