Chicken daube

Ingredients :

4-5 pieces of chicken thighs

1 onion pureed in blender

1 large potato, yellow food colouring for potatoes

1 tbsp ginger/garlic paste

1 tsp cumin powder

2 tsp coriander powder

1/4 tsp cinnamon powder

Pinch of cloves

Pinch of cardamon powder

tomato puree

oil

salt

coriander leaves

Procedures :

  1. Wash a potato and dice it into cubes. Put some yellow coloured powder over the diced potatoes and fry in oil for some minutes. Then remove from heat.
  2. Wash the chicken pieces and remove the outer thick skin only. Fry the chicken in oil till they change colour.
  3. Add the onion pureed in a blender.
  4. Now add all the spices – cumin powder, coriander powder, cinnamon powder, cloves, cardamon powder. Mix over the chicken, keep turning and cook.
  5. Add ginger garlic paste and cook.
  6. Add 2-3 tbsp of tomato puree. Cook.
  7. Add water to 1/2 fill the pan so as to get more sauce with the chicken. Mix.
  8. Add the already fried potatoes.
  9. Add salt to taste.
  10. Cover the pan with a lid. Cook on medium flame till the chicken has soften and has cooked inside.
  11. Check the softness of potatoes also.
  12. Optional – add peas and some fried onions over the top once the chicken is cooked.
  13. Sprinkle with fresh coriander leaves over the top.
