Couscous vegetarian

Ingredients :

2 cups of couscous

3 and a half cup of water

salt

oil

Veggies and spices : corns, peas, carrots, raisins, almonds, tomatoes, onions

lemon

Procedures :

1.Wash and dice all necessary vegetables that you would use for couscous. I have used 1 cup corns, 3-4 onions, 10 pieces of almonds that i cut into slices, a handful of raisins, 2 tomatoes canned, 1/4 cup peas, 2 medium carrots.

You can have add-ons like : mushroom, baby corns, capsicum, chickpeas, green chili, pineapple slices, cashew nuts etc

2. Wash and rinse 2 cups of couscous medium grains. Reserve.

3. In a pan, heat 4-5 tablespoon of oil. Saute all vegetables on medium flame and salt to your taste.. Keep stirring from time to time. Cook for a few minutes.

4. Add the 2 cups of washed couscous in the pan. Pour 3 and a half cup of water in the pan. Give a stir. Cook on medium flame. Add a bit of salt to the couscous.

5. Check the couscous grains from time to time if it is soft.

6.Allow all water to evaporate.

7. Squeeze lemon drops over the couscous for additional flavour.
