




Ingredients for Dory fish fillet in masala
For fish marination
3 pieces of Dory fish fillet defrost
1 or 2 tablespoon of turmeric powder
pinch of salt
For masala
3/4 bowl of powdered fish masala, add some water to the masala in bowl till liquid is obtained
8-9 curry leaves
2-3 tablespoon of ginger/garlic paste
1/4 bowl of Tamarind paste without seeds and dissolve in some water
1/2 bowl of Tomato puree
1 onion
oil for cooking
Optional : red chilli
Procedures :
1.Defrost 3 pieces of Dory fish fillet
2. Marinate the fish fillet with a pinch of salt and turmeric powder. Leave to rest for 1 hour.
3. After one hour, deep fry the fish on both sides in some oil. Reserve fish fillet in a bowl.
4. Prepare the following for the masala : 3/4 bowl of powdered fish masala that is dissolved to liquid form by adding some (1 bowl) water, 1/2 bowl of tomato puree, 2 bowls of water for cooking, 1/4 bowl of tamarind paste dissolve in water, 1 peeled and cut onion, 8-9 curry leaves, 2-3 tablespoon of garlic/ginger paste.
5. In a pan, add 2 tablespoon of oil. Heat it. Then fry the onions, ginger/garlic paste and curry leaves. Cook for a few minutes till tender.
6. Add the bowl of liquid fish masala and cook the masala again. Little by little add more water till the masala is cooked. It should not be grainy.
7. Add 1/2 bowl of tomato puree and cook the masala again for some minutes. The masala will become fish sauce.
8. Add tamarind water that is already salty to the sauce. Check for amount of saltiness you need. Cook again for some more minutes.
9. Add the 3 slices of Dory fish fillet in the fish masala. Cover the pan and cook again for some minutes.
Optional : Add 1 red dry chilli when frying onions, garlic/ginger paste and curry leaves.
Optional : Sprinkle fish curry with coriander leaves.
Serve hot with rice or bread accompanied by a chutney.
