Bread fritters and cabbage & onion fritters, eggplant fritters, bhajia, zucchini

Ingredients :

2 cups of chickpea flour

1 cup of self raising flour

1 tbsp baking powder

1 pinch of yellow food colour

salt

Spring onions

Fritter variations: bread slices, onions, eggplant, cubanelle peppers, cabbage

Procedures:

For the dough –

1.In a bowl, put 2 cups of chickpea flour that is sieved. Then add 1 cup of self raising flour. Add 1 tablespoon of baking powder and a pinch of yellow food colour. Whisk the mixture. Add water till a runny consistency is obtained. Add salt. Add small pieces of spring onions to the batter.

2. Have some bread slices ready. Mix 1 slice of bread (both sides) in the chickpea flour batter.

3. Deep fry the bread till golden brown. Remove from oil and place of cooking paper to absorb remaining oil.

N.B- bread slices can be replaced. Onion fritters can be fried, eggplant fritters as well, cubanelle peppers also, cabbage fritters. These can be dipped in the chickpea batter and deep fried in oil.
