Laddoo

Ingredients :

FOR FRYING BESSAN

1 cup gram flour or bessan

1 cup white sugar or to taste

1 cup water

oil for frying and few (2) tbsp of ghee

FOR SYRUP

1/2 cup water

1 cup sugar or to taste

1/2 tsp cardamon powder

2 pinch yellow food colouring

2 tbsp ghee

lemon few drops

Procedures :

  1. In a big bowl, add sifted 1 cup of gram flour, add 1 cup of white sugar. Mix. Then little by little add 1 cup of water till the mixture is fluid and liquid.
  2. Heat oil and 2 tablespoon of ghee in a frying pan.
  3. Using a slotted ladle add batches of bessan mixture over the ladle and fry in medium heat for a few minutes. Remove from heat and place on paper to absorb oil. Repeat the process of frying for the whole bessan fluid mixture.
  4. In a pan, add 1/2 cup of water, 1 cup of sugar, 1/2 teaspoon of cardamon powder. Add 2 pinch of yellow food colouring. Add 2 tbsp of ghee. Add few drops of lemon. Allow to boil.
  5. Gradually place the fried bessan in the sugar/water syrup and keep mixing till dry.
  6. Allow to cool and then make rounded shape laddoo’s with the hands.
  7. You can refrigerate and keep for 1 week.
  8. Optional : roll each laddoo in coconut powder, add cashews or raisins.
