Lamington cake

Also called Francis jam or gateau carre rouge !

Ingredients :

1 1/2 cup of unsalted butter at room temperature

1 cup white sugar

2 tbsp vanilla essence

4 eggs

2 cups of self raising flour

strawberry agar agar 1/2 packet 50g

water to cook agar agar

red food colouring optional

coconut powder

whipped cream in aerosol

some red cherries dried or in syrup

Procedures :

  1. Mix 1 1/2 cup of unsalted butter with 1 cup of white sugar. Mix.
  2. Add 2 tablespoon of vanilla essence. Mix.
  3. Add 4 eggs. Mix with hand held blender.
  4. Add 2 cups of self raising flour. Mix with blender.
  5. Butter a square baking tray.
  6. Pour in the mixture in the tray.
  7. Preheat oven 10 minutes 200 degrees
  8. Cook the cake for 35 minutes approximately at 200 degrees in oven.
  9. Use a wooden stick and insert in cake to check if cooked inside.
  10. Allow the cake to cool. Then demould.
  11. Put 50g of agar agar powder strawberry flavour in some 200 ml water. You can also add a pinch of red food colouring to the liquid. Allow to boil. Once boiling reached remove from heat.
  12. Take the cake and cut into square form each piece of cake having same size.
  13. Take one square of cake dip in the strawberry agar agar liquid, then roll each square sides in coconut powder. Repeat the process for all small square cakes.
  14. Use a whipped cream aerosol to spray some cream on top and add a cherry over the cake.

Ready to serve with tea / coffee!!
