Leek, potato, carrot soup

Ingredients :

2-3 leek leaves

1 potato

1 carrot

water

salt

Procedures :

  1. Wash thoroughly all vegetables – leek, potato and carrot.
  2. Peel off the potato and carrot skin.
  3. Dice the vegetables in smaller parts – leek, potato, carrot
  4. Add water and 1/2 fill a pressure cooker with it.
  5. Add all the diced vegetables.
  6. Add some salt
  7. Close lid of pressure cooker and let the vegetables cook on medium flame.
  8. Once the vegetables are soft, remove from heat. Strain the water and reserve in a bowl as vegetable stock.
  9. Add all the cooked vegetables in a blender.
  10. Use a ladle to pour in the vegetables stock. If you want a thick soup you have to add less water.
  11. Blend the mixture till smooth paste.
  12. Serve leek soup with rice or bread!
