







Ingredients :
2-3 leek leaves
1 potato
1 carrot
water
salt
Procedures :
- Wash thoroughly all vegetables – leek, potato and carrot.
- Peel off the potato and carrot skin.
- Dice the vegetables in smaller parts – leek, potato, carrot
- Add water and 1/2 fill a pressure cooker with it.
- Add all the diced vegetables.
- Add some salt
- Close lid of pressure cooker and let the vegetables cook on medium flame.
- Once the vegetables are soft, remove from heat. Strain the water and reserve in a bowl as vegetable stock.
- Add all the cooked vegetables in a blender.
- Use a ladle to pour in the vegetables stock. If you want a thick soup you have to add less water.
- Blend the mixture till smooth paste.
- Serve leek soup with rice or bread!
