Lima beans

Ingredients :

1 1/2 cup of lima beans

1-2 potatoes

1-2 long eggplants

1 bowl of masala powder

1-2 tablespoon of turmeric powder

1/2 bowl of tomato puree

1/2 filled a pressure cooker with water to cook lima beans

2-3 pinch of salt

3-4 tablespoon oil

Procedures:

1.Soak 1 1/2 cup of lima beans overnight in water.

2. In the morning, wash and rinse the lima beans.

3. Wash the potatoes, peel and dice in cubes.

4. Wash the eggplants and cut into long slices.

5. Put the lima beans along with potatoes and eggplants in a pressure cooker with water and salt. Cook till tender. Set aside and reserve. Keep the boiled water of lima beans.

6. In a bowl put a small packet of masala powder and 1-2 tablespoon of turmeric powder, add some water to fill in the bowl. Stir till there is no lumps.

7. In a saucepan, add oil and fry the liquid masala and turmeric to cook it for a few minutes.

8. Add water (from lima beans ,potatoes and eggplant mixture in pressure cooker) to cook the masala in saucepan even more and make a sauce.

9. Add tomato puree to the masala sauce

10. Add all the lima beans, potatoes and eggplants and cook again in the masala mixture.. Stir without breaking the beans and potatoes.

11. Sprinkle the top of lima beans curry with coriander leaves. Serve hot.
