













Ingredients :
Handful of spinach leaves
1 onion chopped
1 tomato chopped
2 eggs beaten
150 ml liquid milk
1 frozen short crust pastry
Few mozzarella cheese
salt
Procedures :
- Wash the veggies- spinach, onion, tomato
- Sautee the above veggies in some butter or oil to fry till soft.
- Wait for an hour to defrost short crust bread.
- After one hour, open the dough.
- Spray oil in cupcake moulds.
- Insert the short crust dough over the cup cake mould. Cut according to the size of the cup.
- In a bowl, beat 2 eggs. Then add the sauteed veggies in the beaten eggs, Add 150 ml milk. Beat again and add some salt.
- Pour in the liquid mixture in the small dough that is inserted inside the cupcake mould.
- Place few mozzarella cheese on top of the mixture.
- Preheat oven 180 C for 15 minutes.
- Bake the mini quiche for 20 minutes at 180 C. Check if more baking time is required.
- Serve for a quick lunch!
