Mini quiche spinach

Ingredients :

Handful of spinach leaves

1 onion chopped

1 tomato chopped

2 eggs beaten

150 ml liquid milk

1 frozen short crust pastry

Few mozzarella cheese

salt

Procedures :

  1. Wash the veggies- spinach, onion, tomato
  2. Sautee the above veggies in some butter or oil to fry till soft.
  3. Wait for an hour to defrost short crust bread.
  4. After one hour, open the dough.
  5. Spray oil in cupcake moulds.
  6. Insert the short crust dough over the cup cake mould. Cut according to the size of the cup.
  7. In a bowl, beat 2 eggs. Then add the sauteed veggies in the beaten eggs, Add 150 ml milk. Beat again and add some salt.
  8. Pour in the liquid mixture in the small dough that is inserted inside the cupcake mould.
  9. Place few mozzarella cheese on top of the mixture.
  10. Preheat oven 180 C for 15 minutes.
  11. Bake the mini quiche for 20 minutes at 180 C. Check if more baking time is required.
  12. Serve for a quick lunch!
