Omelet, chickpeas and orange juice

Ingredients :

For the omelet

1 beaten egg

1/2 onion

salt

some chopped tomatoes

grated cheese

oil for frying

For the chickpeas

1 can of chickpeas/ ready made

tomato sauce in can

salt

oil for frying

For orange juice

6 oranges

Procedures :

For the omelet

  1. Beat one egg in a bowl. Add some diced onions, tomatoes and salt. Heat oil in a pan. Once the oil is heated, fry the beaten egg with the diced onions and tomatoes. Fry the egg on both sides till golden yellowish brown. Add some grated cheese on top while cooking.

For the chickpeas

1.Open a can of chickpeas. Remove the outer skin on each chickpea. Reserve the chickpea in a bowl but discard the preservative liquid inside the can/tin. Open a can of tomato sauce. Heat some oil in another pan. Once the oil is hot, put the tomato sauce and cook over medium flame. You may add salt to taste. Then add the already cooked chickpeas in the tomato sauce and stir for a few minutes. Optional to add coriander leaves.

For the orange juice

  1. Open cut into two halves all the 6 oranges. Using a juicer or manual orange presser, remove the juice from the oranges and serve in a glass.

Breakfast is ready : Omelet, chickpeas in tomato sauce and orange juice!!
