







Ingredients :
For the malai dough
1 cup 100 g milk powder of Farmland powdered milk
2 teaspoon of white flour
1 teaspoon of baking powder
2 tablespoon of QBB ghee
5-6 tablespoon of liquid milk or use liquid milk till you form the dough
For the milk
2 cups liquid milk
3/4 cup of Farmland milk powder
sugar as per your taste
1 teaspoon of cardamon powder
1 teaspoon of turmeric powder for the yellow colour milk
Chopped almonds, pistachios, nuts as per your taste
Procedures :
- In a bowl, add 100g milk powder, 2 teaspoon of white flour, 1 teaspoon of baking powder and 2 tablespoon of QBB ghee. Mix thoroughly till a grainy texture. Now add few tablespoon of liquid milk that will allow to knead and make a dough. Don’t knead too much otherwise the dough will become hard. The dough should neither be hard nor be too soft. Allow the dough to rest for some 10 minutes. Then make small balls and flatten each of them.
- In another bowl, add 2 cups of liquid milk and 3/4 cup of milk powder. Mix thoroughly till there is no lump. Pour the milk in a pan and put to boil on low heat.
- While the milk is becoming hot, add cardamon powder, turmeric grated or powder, add sugar. Leave to boil on low heat.
- As soon as the milk starts to boil after 15-20 minutes and you notice malai of milk (cream layer of milk), then add the flatten dough and cook for some 5-7 minutes while the milk is still boiling. Again on low flame.
- As the dough is cooked in the milk, spread on top chopped cashews, almond flakes and pistachio. Optional : rose petals, you can add vanilla leaf or rose essence.
- Transfer the ras malai in a glass vessel. Allow to cool.
- Refrigerate the ras malai for 5 hours or more.
