




Ingredients :
1.25 kg of chicken liver
1 bowl of liquid milk for marination
2-3 large onions
curry leaves
garlic ginger paste
green chillies
salt to taste
Pepper to taste
1 small bowl of oil for frying.
Procedures :
1.Firstly have fresh chicken liver. Wash and clean the chicken liver. Remove the fatty part. Cut the chicken liver into smaller pieces if you need better digestion.
2.Marinate for 1 hour the chicken liver pieces in liquid milk. Reserve.
3. In the mean time, prepare in a plate, washed curry leaves, 2-3 tablespoon of ginger/garlic paste, salt to taste, pepper to taste, cut onions a bit big, a few green chilies.
4. Strain the chicken liver pieces and discard the milk. Wash thoroughly the chicken liver to remove all liquid milk from it. Now the flesh of liver is tender after the marination.
5. Heat 1 small bowl of oil in a pan.
6. Fry the chicken liver pieces on medium flame.
7. Little by little add salt, pepper , ginger/garlic paste, curry leaves and green chilies over the half cooked liver. Cook over medium heat. Stir from time to time.
8. When liver is almost cooked, add onion pieces. Cook for a few minutes.
9. Serve hot with bread and chili sauce and salad.
