Sauteed pumpkin

Ingredients :

1/2 kg pumpkin

2-3 onions

thyme

oil

water

sugar to taste

salt to taste

Optional : black mustard seeds/ dry red chili

Procedures :

1.Wash and peel off the skin of pumpkin and remove seeds. Then dice the pumpkins in small parts.

2. Peel an onion and cut into slices.

3. In a pan, heat some oil.

4. Fry onions but do not allow to become brown. Stir from time to time over medium heat.

5. Add pumpkin together with onions and cook for a few minutes. Add 1/2 bowl of water. Cover the pan with a lid and cook again for some minutes but keep checking the cooking process.

6. When the pumpkin has become tender and all water has evaporated, crush into puree form.

7. Add sugar and salt to your taste. Stir.

8. Add thyme. Stir.

9: Optional : to fry in oil some mustard seeds and red dry chili

Serve alongside paratha, lima beans, brede, tomato chutney.
