Spinach pesto spaghetti

Ingredients for cooking pasta only

  • 1 packet of rivoire et carre spaghetti
  • 1 pan 3/4 filled with water
  • salt to taste
  • oil 1-2 tbsp

Ingredients for pesto spinach

1 packet of spinach herbs only

50 g cashew nuts

lemon juice fresh

olive oil

Procedures :

  1. Start by cooking the pasta first then we cook the spinach pesto.
  2. In a pan, boil water. Add salt to taste and a tablespoon of oil in the pasta Once boiling point is reached, plunge spaghetti noodles in the pan and allow to cook for some 20-25 minutes or till soft.
  3. After the pasta has soften, remove the pan from heat and strain all the water from the spaghetti.
  4. Wash the spinach leaves and chop into smaller slices.
  5. Add a small portion of spinach leaves, add lemon juice, add some cashew nuts, add some water and drizzle olive oil in it. Grind everything in a mixer/grinder to form a paste. Repeat same process for small batch of spinach leaves to make the spinach pesto. After grinding add salt to the paste.
  6. In a pan, add butter. Heat it. Pour in the grinded pesto and cook over medium flame.
  7. Once the spinach is cooked, pour in the spaghetti and mix.

Enjoy with cheddar cheese or parmesan!
