














Ingredients :
1000 g sweet potatoes
water to boil sweet potatoes
160 g melted butter
125 g sugar
3 eggs
40 g flour
vanilla essence few drops
Zest of lemon
Procedures :
- Wash thoroughly the sweet potatoes to remove soil residues.
- Cut each sweet potato into halves. Do not peel the outer skin.
- Put all the halves sweet potatoes (1000g approx) to boil till soft in a pressure cooker.
- After 4-5 whistles, remove pressure cooker from heat. Check for softness of sweet potatoes.
- Peel the sweet potatoes if soft and mash them.
- Then add the melted butter, sugar, eggs, flour, vanilla essence, and lemon zest.
- Mix to form a soft batter.
- Butter a pan mould and spread the batter evenly or use a cup cake mould.
- Bake the sweet potato cake at 180 degrees and for 45-50 minutes.
