Sweet potato cake

Ingredients :

1000 g sweet potatoes

water to boil sweet potatoes

160 g melted butter

125 g sugar

3 eggs

40 g flour

vanilla essence few drops

Zest of lemon

Procedures :

  1. Wash thoroughly the sweet potatoes to remove soil residues.
  2. Cut each sweet potato into halves. Do not peel the outer skin.
  3. Put all the halves sweet potatoes (1000g approx) to boil till soft in a pressure cooker.
  4. After 4-5 whistles, remove pressure cooker from heat. Check for softness of sweet potatoes.
  5. Peel the sweet potatoes if soft and mash them.
  6. Then add the melted butter, sugar, eggs, flour, vanilla essence, and lemon zest.
  7. Mix to form a soft batter.
  8. Butter a pan mould and spread the batter evenly or use a cup cake mould.
  9. Bake the sweet potato cake at 180 degrees and for 45-50 minutes.
