
Ingredients :
500 ml liquid cold milk
4 tablespoon strawberry syrup
4 tablespoon agar agar powder
100 ml water to cook agar agar
1 pinch red food colouring
1/2 cup tapioca pearls
4 cups of water to cook tapioca pearls
Procedures :
1.In a pan heat 4 cups of water. When the water starts to boil, add 1/2 cup of washed tapioca pearls and cook for 15-20 minutes till tapioca pearls become translucent. After the pearls have been cooked, strain the tapioca pearls and put cold water over it so that they don’t become sticky. Reserve the pearls in a bowl.
2.In another pan, add 100 ml water and put 4 tablespoon of agar agar powder in the water. Add a pinch of red food colouring. Keep stirring. Allow to boil. Remove from heat. Pour the red agar agar mixture in a glassware and allow to solidify. Before one hour it should set. Reserve.
3. After the agar agar has set, place in fridge. Then after it has chilled, cut the agar agar mousse in small square shapes.
4. In a jar, add 500 ml cold milk. Add 4-5 tablespoon of strawberry syrup. Give a stir.
5. Add the cooked tapioca pearls in the milk. Give a stir. Add the red agar agar mousse. Give another stir.
Additional toppings : You can add pistachio, cashews, grated white chocolate on top of the drink. Serve chill.
