Upma

Ingredients :

2 cups of rava suji or semolina

4 1/2 cups of Water

5 tablespoon oil or ghee

1 tablespoon mustard seeds

1 small ginger piece

2 tablespoon urad dhall

6-8 curry leaves

handful of almonds slices

handful of dry raisins

1 bowl of corns

Vegetables options : peas, onions, capsicum, carrots, cauliflower, paneer, chili

Procedures :

1.Roast the semolina for a few minutes. Allow to cool.

2. In a pan, heat oil. Add mustard seeds, urad dhall and curry leaves. Cook for a few minutes in oil over medium heat.

3. Add ginger piece, defrosted corns, almonds slices, dry raisins and continue to cook for two more minutes.

4.Pour four and a half cups of water and allow to boil. Add the roasted semolina/suji little by little. Cook and stir continuously to avoid lumps to form.

5. Add salt to taste.

6. Cook the suji till all water has evaporated and the suji is soft.

7. Serve upma hot with chutney.

Optional : Boil other vegetables and add to the semolina. Add cashew or pistachio is optional.
