
Ingredients :
1/2 kg yard long beans or voeme
1 small onion
1 dry red chili
some methi
2 small potatoes
salt to taste
oil for frying
1/2 bowl water
2 small eggplants
Procedures :
1.Wash the following vegetables – yard long beans, onion, potatoes
2.Cut each yard long bean into a 3 cm length dimension.
3.Peel the potatoes and cut into dices.
4. Wash the eggplants in water with some salt. Then drain the water. Cut the eggplants into medium slices.
5. In a pressure cooker, heat some oil.
6. Add in onions, methi, red dry chili and fry on medium flame.
7.Add the diced potatoes. Stir for a few minutes.
8.Then add the yard long beans and the eggplant slices.
9. Put half bowl of water and cook on medium flame by stirring.
10. Add salt to taste.
11. After cooking for some 10-15 minutes, close the lid of the pressure cooker so as the potatoes become soft and tender. Cook for a few minutes till whistle blow.
Serve with rice, dhall, chutney.
